What is the best apron for wood carving?

It depends on how you carve. For bench work and whittling, a full apron with pockets that covers you from chest to knees keeps chips off your clothes and tools within reach. If you mostly carve spoons and bowls, a leather carving bib protects your chest during close-up cuts.

Is a leather or canvas carving apron better?

Leather is more durable, wipes clean from dust, grease and paint, and develops character over time, but it is heavier and costs more. Does a carving apron protect against knife cuts?
